I think “recipe” is kind of overkill in this series. These instructions for food I’m going to share are for when you’re feeling poor, lazy or both, but don’t want to eat a meal entirely devoid of nutrients.
Today’s Desperate Times recipe: Sweet Potato a la Rachary (Rachary is the Brangelina version of our names, fyi).
Ideal for any meal of the day, unless you’re one of those people who can’t handle eggs after 11am, in which case, I’m not sure we can be friends.
- 1 large sweet potato
- 1 egg
Optional: any of a variety of random shizz you might have in your refrigerator. Examples:
- Low-fat plain yogurt
- Low-fat cottage cheese
- Any kind of cheese
- baby spinach/peas/whathaveyou
Directions:
Clean sweet potato of dirt and bad spots; poke with fork. Microwave on high for ~4 mins. Turn over, microwave another few minutes until desired cookedness is reached.
Meanwhile, fry egg (or prepare another way to your liking; I prefer over-medium). If adding baby spinach, suggest throwing it in the egg skillet for a few seconds at least to let it wilt a bit – or longer, if you want it soft.
Season sweet potato as you like (I usually go with a little smart balance, plus freshly cracked pepper; a dash of tobasco or Old Bay makes it interesting). Add cheese or other shizz. Top with fried egg. Cut up all together till it’s a gooey mess of deliciousness. Enjoy!

You plug in the ingredients, specify serving size, and it tells you the whole breakdown. This particular version includes sweet potato, egg, yogurt and cheddar cheese.
PPS: Highly recommend eating the skin of the sweet potato along with the meat of it – some people do not do this, I don’t get it, that’s where you get the good fiber (I’m pretty sure). But if you’re concerned about anything, buy organic and scrub it well!
I just found your blog too!! I love your sweet potato idea. Lately, I’ve been into those microwave sweet potatoes with beans or hummus and cottage cheese when I work late. I will have to try this egg spin though.
